The story

We've heard about Finca Miramar for a while as it is recognized as one the country's finest farm. So when we got the opportunity to source a lot of Arabigo from them we did not hesitate to jump on the occasion. It has become one of our favorite as well as yours rather fast!
In Central America, Typica is called Arabigo. After being carefully harvested by hand, cherries are placed in a closed tank without oxygen (anaerobic) then sun dried (natural). A very impressive classic double fermentation, tasting very clean however.
